Meatball Soup

The meatball soup is prepared with savory beef meatballs in a base of beef broth. Cooked with vegetables like peppers and onions along with celery, the meatballs soup is flavored with parsley. As the soup simmers, the meatballs also blend their flavors with the soup.
Ingredients
  Beef broth 4 Cup (64 tbs)
  Tomatoes/128 ounce can tomatoes 6 Large, seeded and chopped
  Green pepper 1 , chopped
  Onion 1 Large, thinly sliced
  Celery ribs 2 , diced
  Parsley/2 tablespoon dried 1⁄4 Cup (4 tbs)
  Extra lean ground beef 1 1⁄2 Pound
  Oregano 1 Teaspoon
  Garlic 1 Clove (5 gm), minced
  Egg 1 , beaten
  Long grain rice 1⁄3 Cup (5.33 tbs) (Cooked)
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
Directions

Combine all ingredients for soup; simmer gently, covered, 45 minutes..
Meatballs: Mix ingredients and shape into small balls.
Fry in pan until done and rinse with very hot water to remove any fat.
Drop meatballs into broth and simmer gently, covered, for 30 more minutes.
