Peasant Soup

The Peasant Soup is simple and yet wonderfully delicious. My husband is in love with this soup, as not only is it light on your stomach it is an excellent source of vegetable nutrients. Try this flexible Peasant Soup recipe!
Ingredients
  Diced vegetables 4 Cup (64 tbs)
  Onions 2 , diced
  Salt 1 Teaspoon
  Pepper 1⁄2 Teaspoon
  Water 4 Cup (64 tbs)
  Sour cream 1⁄2 Cup (8 tbs)
Directions

Put all vegetables into the cooker.
Add salt, pepper, and water.
Close cover on cooker.
Set pressure regulator in place.
When pressure is reached, cook for 5 minutes.
Cool at once under running water.
Stir in the sour cream and simmer until hot.
Serve soup at once
