The pumpkin soup is a rich and savory soup prepared with fresh pumpkin. Cooked with chicken stock, cream and onions, this pumpkin soup recipe can be prepared in the microwave. Flavored with nutmeg and seasoned to taste, the pumpkin soup may be served after cooling a bit. Adapted from Sharp Microwave and Convection Cookbook.
|Pumpkin||1 Kilogram, peeled and chopped|
|Onions||2 Small, chopped|
|Chicken stock||1 Cup (16 tbs)|
|Cream||1 Cup (16 tbs)|
Place pumpkin, onion and stock in a large bowl.
Cover and cook for 15 minutes on HIGH.
Place in a blender or processor and blend until smooth.
Transfer to a serving bowl and stir in cream and nutmeg.
Season to taste.
