|Crookneck squash||1 1⁄2 Pound, trimmed and sliced (4 Units)|
|Carrot||1 Medium, peeled and sliced|
|Onion||1 Large, chopped|
|Leeks||1 , sliced|
|Garlic||2 Clove (10 gm), minced|
|Chicken stock/3 cups water and 4 bouillon cubes||3 Cup (48 tbs)|
|Ground cumin||1⁄4 Teaspoon|
|Ground nutmeg||1⁄8 Teaspoon|
|Low fat yogurt||1⁄4 Cup (4 tbs)|
|Chopped chives/Minced parsley||1 Tablespoon|
Place in a large saucepan the squash carrot onion leek garlic, chicken stock, cumin, and nutmeg.
Cover and simmer 15 minutes.
Add Tabasco, turn into a blender container, and puree.
Add salt to taste.
Serve with yogurt and chopped chives.
