Ingredients
  Spinach 1 1⁄2 Bunch (150 gm) (1.50 Pounds)
  Soy sauce 1 Tablespoon
  Salt 2 1⁄4 Teaspoon
  Sliced lean pork 1⁄2 Cup (8 tbs), sliced 1 1/2 x 1/2 x 1/4 inches
  Vegetable oil 1 Tablespoon
  Garlic 1 Clove (5 gm), mashed
  Boiling water 6 Cup (96 tbs)
Directions

Remove the tough stems from the spinach and wash the leafy portions thoroughly.
Add the soy sauce and 1/4 tea spoon salt to the pork.
Heat the oil in a wok, add the mashed garlic and pork, and fry them for 3 minutes.
Remove the garlic if desired.
Add the boiling water, 2 teaspoons salt, and simmer for 10 minutes.
Add the spinach and simmer for 5 minutes.
Serve hot.
One-fourth cup dried shrimp may be substituted for the pork and the salt reduced to 1 1/2 teaspoons.
Wash and soak the shrimp for 15 minutes.
Drain, but keep the liquid.
Fry the shrimp, add the liquid, and simmer for 10 minutes, then add the spinach.
