Green Pea-Spinach Soup
|Frozen green peas||2 1⁄2 Cup (40 tbs)|
|Chopped spinach||3⁄4 Cup (12 tbs) (Fresh Or Thawed, Frozen)|
|Chopped onion||1⁄3 Cup (5.33 tbs)|
|Non fat chicken broth||2 1⁄2 Cup (40 tbs)|
|Nonfat buttermilk||1 1⁄2 Cup (24 tbs)|
|Dried basil leaves||1 Teaspoon|
Combine green peas, onion, chicken broth, basil, and spinach in a saucepan.
Simmer for 15 minutes or until the onion is tender.
Transfer the green pea-spinach mixture to a blender or food processor and puree.
Return pureed mixture to saucepan.
Heat for 5 minutes or until warmed through.
