Beef Soup (Zuppa)
|Chuck steak||1 1⁄2 Pound (750 gram)|
|Soup bones with marrow||1 Pound (500 gram)|
|Celery stalk with leaves||1 , halved|
|Tomatoes||1 Can (10 oz)|
|Pastina||1⁄2 Pound (250 gram)|
|Onions||2 Medium, quartered|
Place beef and bones in a large saucepan and cover with cold water.
Bring to a boil and skim top with a spoon.
Add whole vegetables to the meat.
Season to taste with salt and pepper.
Cover and cook over a low heat for 2-2 1/2 hours or until meat is tender.
Remove meat, bones and vegetables from the soup.
Cut meat into small pieces.
Puree the vegetables and return both the meat and the vegetables to the soup.
Add pastina and cook for another 15 minutes.
