Country Style Bean Soup

Ingredients
  Dry lima beans 2 1⁄2 Cup (40 tbs)
  Water 8 Cup (128 tbs)
  Salt 1 Teaspoon
  Bulk pork sausage 1⁄2 Pound
  Apples 2 Medium, peeled, cored and cubed to make 2 cups
  Celery stalks 2 , chopped to make 1 cup
  Onion 1 Large, chopped to make 1 cup
  Garlic 1 Clove (5 gm), minced
  Canned tomatoes 28 Ounce, cut up
  Brown sugar 2 Tablespoon
  Prepared mustard 2 Tablespoon
  Pepper 1⁄4 Teaspoon
Directions

Rinse beans.
In 5-quart Dutch oven or kettle combine beans and water.
Bring to boiling.
Reduce heat; cover and simmer for 2 minutes.
Remove from heat.
Let stand, covered, for 1 hour.
{Or, soak beans in the water overnight in a covered pan.)
Do not drain.
Add 1 teaspoon salt.
Bring to boiling.
Reduce heat; cover and simmer beans for 1 hour.In skillet cook sausage, apples, celery, onion, and garlic till sausage is done; drain off fat.
Add sausage mixture to beans.
Stir in undrained tomatoes, brown sugar, mustard, 1 teaspoon salt, and pepper.
Bring to boiling; reduce heat.
Cover and simmer about 1 hour longer.
