Onion Soup

Ingredients
  Oil 3 Tablespoon
  Onions 4 Large, chopped
  Garlic 1 Clove (5 gm), minced
  Stock 3 Cup (48 tbs)
  Tarragon 1⁄2 Teaspoon
  Parsley sprigs 4 , minced
  Tomato juice 1 Cup (16 tbs)
  Soy flour 1 Tablespoon
  Nutritional yeast 3 Tablespoon
  Salt 1 Teaspoon
  Whole wheat bread slice 6 , toasted
  Parmesan cheese 1 Tablespoon, grated
Directions

Heat oil in pot and in it lightly saute onions and garlic.
Add stock and herbs.
Mix tomato juice with flour, yeast and salt.
Blend and add to soup mixture.
Cover pot.
Simmer 15 minutes.
Serve topped with toast and cheese.
