Garlic Flavored Black Bean Soup

Ingredients
  Black beans 12 Ounce
  Ham hocks 2 Small
  Cooking oil 1⁄2 Cup (8 tbs)
  Vinegar 1⁄4 Cup (4 tbs)
  Onion 1 Large
  Green peppers 2
  Garlic pods 2
  Bay leaves 2
  Salt 1⁄2 Tablespoon
  Water 1 1⁄4 Quart
Directions

Wash black beans well: cover with 5 C.
water and soak overnight.
Using same soaking water bring beans to boil, cook 2 minutes.
Cover and let stand 1 hour without heat.
Fry slightly: onion, green peppers and garlic in cooking oil.
Combine all the ingredients except the vinegar which is added a few minutes before the beans are ready to be served.
Cook beans on low heat until tender (2 hrs.) and liquid is of a thick consistency.
Serve beans over long grain rice and topped with chopped onions.
