Easy Spinach Soup
|Frozen chopped spinach||2|
|Chicken broth||2 Cup (32 tbs)|
|Whipping cream||1 Cup (16 tbs)|
|Onion||1⁄2 , chopped|
Thaw spinach and squeeze to remove excess liquid.
Melt butter, add flour, and stir to make roux.
Add onions, spinach, whipping cream, salt and pepper to taste, and simmer 20 minutes.
Puree portions in blender until all is of equal consistency.
Garnish with nutmeg.
May be served hot or cold.
