Classic Cream Of Celery Soup

Ingredients
  Celery 3 Cup (48 tbs)
  Boiling water 2 Cup (32 tbs)
  Salt 1⁄2 Teaspoon
  Flour 4 Tablespoon
  Butter 4 Tablespoon (or fortified margarine)
  Milk 2 Cup (32 tbs)
  Pepper 1⁄8 Teaspoon
Directions

Wash the celery and cut into pieces, using both stalk and leaves.
Cook in a small amount of boiling water until very soft and tender; rub through a sieve.
Make a white sauce of fat, flour, milk, and seasonings.
Add celery
