Stormy Day Bean Soup
|Dried navy beans||1 Pound|
|Water||7 Cup (112 tbs)|
|Cubed cooked smoked ham||2 Cup (32 tbs)|
|Minced onion||1⁄4 Cup (4 tbs)|
Heat beans and water to boiling; boil gently 2 minutes.
Remove from heat; cover and let stand 1 hour.
Add remaining ingredients.
Heat to boiling.
Reduce heat; cover and simmer about 1 hour and 15 minutes or until beans are soft.
Skim off foam occasionally.
Remove bay leaf and ham bone.
Trim meat from bone; add to soup.
Season to taste.
