Try out this healthy and light Carrot Soup before dinner tonight! Spice it up with a lil pepper if you want to! This Carrot Soup is sure to ring a wake up call in your sleeping stomach for the coming dinner courses!
Ingredients
  Unsalted margarine 1 Tablespoon
  Chopped carrots 1 Cup (16 tbs)
  Chopped onion 1⁄4 Cup (4 tbs)
  Chopped celery 1⁄4 Cup (4 tbs)
  Pared potato 3 Ounce
  Instant chicken broth and seasoning mix 16 Ounce
  Garlic cloves 1⁄2 Small
  Water 2 Cup (32 tbs)
Directions

In 1-quart saucepan heat margarine until bubbly and hot; add onion, celery, and garlic and saute, stirring constantly, until onion is soft.
Add remaining ingredients and bring to a boil.
Reduce heat, cover, and let simmer until vegetables are soft, about 20 minutes; let cool slightly.
Pour mixture into blender container and process at low speed until smooth; reheat if necessary.
