Roquebrune Fish Soup

Ingredients
  Olive oil 50 Milliliter
  Garlic 1 Clove (5 gm)
  Onion 1 Medium
  Thyme 1⁄2 Teaspoon
  Saffron 1 Pinch
  Fish fillets 1 1⁄2 Pound
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Dry white wine 250 Milliliter
  Boiling water 750 Milliliter
  Tomato paste 1⁄3 Cup (5.33 tbs)
  Fennel seeds 1⁄2 Teaspoon
  Brandy 50 Milliliter
  Cream 500 Milliliter
Directions

Heat the olive oil in a 12-cup (3 L) microwave-safe bowl 2 minutes at HIGH.
Add the garlic, onion, thyme and saffron.
Mix well.
Add the fish cut into 1-inch (2.5 cm) pieces.
Stir and add the salt and pepper, white wine, boiling water, tomato paste and fennel seeds.
Cover and microwave at HIGH 15 minutes.
Add the brandy and cream.
Microwave at HIGH 5 minutes.
