Easy Vegetable Soup
|Diced carrots||3⁄4 Cup (12 tbs)|
|Diced celery||3⁄4 Cup (12 tbs)|
|Diced radishes||3⁄4 Cup (12 tbs)|
|Canned consomme||10 Ounce|
|Water||1 1⁄2 Cup (24 tbs)|
|Grated swiss cheese||4 Tablespoon|
Put bacon in heavy skillet and cook until beginning to brown.
Add carrots, celery, radishes, onion and leek.
Sprinkle with sugar, cover tightly, and cook over very low heat 20 minutes, stirring often.
Add consomme and water and simmer, covered, 30 minutes.
Taste and season with salt and pepper if necessary.
Serve in hot soup bowls.
Sprinkle each serving with 1 tbsp grated cheese.
