Whole Chicken Soup
|Cooked chicken||1 Cup (16 tbs)|
|Chopped onion||1 Large|
|Chopped coriander||1 Teaspoon|
|Chopped green pepper||To Taste|
|Cooked ladies fingers||3⁄4 Cup (12 tbs)|
|Soft corn||1⁄2 Cup (8 tbs)|
|Fried croutons||1 Cup (16 tbs)|
|Chicken stock||1 Cup (16 tbs)|
Melt butter & cook onions gently until soft.
Add tomatoes, pepper, ladies fingers & rice.
Pour in the stock.
Add salt & pepper, if required.
Cover and simmer for about 30 minutes.
Now, add the chopped cooked chicken and herbs.
Lastly, add soft corn.
This soup serves 4 people as a main course with fried croutons or with thick slices of bread & butter.
