Cold Cucumber Soup
|Buttermilk||6 Cup (96 tbs)|
|Green onions||1 1⁄2 Tablespoon, finley minced|
|Parsley||1⁄3 Cup (5.33 tbs), finely chopped|
|Salt||1 1⁄2 Teaspoon|
|Cucumber||1 , unpeeled & sliced|
Peel cucumbers and scrape out seeds.
Dice very finely.
Combine with buttermilk, green onions, parsley, salt and pepper.
Chill very well.
Stir and spoon into chilled soup cups at serving time.
Top with a thin slice cucumber.
