Cold Cucumber Soup

Ingredients
  Cucumbers 3 Medium
  Buttermilk 6 Cup (96 tbs)
  Green onions 1 1⁄2 Tablespoon, finley minced
  Parsley 1⁄3 Cup (5.33 tbs), finely chopped
  Salt 1 1⁄2 Teaspoon
  Pepper 1 Dash
  Cucumber 1 , unpeeled & sliced
Directions

Peel cucumbers and scrape out seeds.
Dice very finely.
Combine with buttermilk, green onions, parsley, salt and pepper.
Chill very well.
Stir and spoon into chilled soup cups at serving time.
Top with a thin slice cucumber.
