Savory Carrot Soup
|Chicken broth||4 Cup (64 tbs)|
|Lemon rind||2 Inch|
|Minced savory/1 teaspoon dried whole savory||1 Tablespoon|
|Curry powder||1 Teaspoon|
|Dry sherry||3 Tablespoon|
|Carrot strips||1 Cup (16 tbs)|
Saute onion in butter in a large skillet until tender.
Add next 8 ingredients.
Cover, reduce heat, and simmer 20 minutes or until carrots are tender.
Pour half of mixture into container of electric blender; process until smooth.
Pour into a bowl or pitcher; repeat with remaining mixture.
Stir in sherry.
Cover and chill.
Garnish soup with carrot strips, if desired.
