Split Yellow Pea Soup With Dumplings
|Split yellow peas||1 Pound|
|Sliced onion||1 1⁄2 Cup (24 tbs)|
|Shredded cabbage||1 1⁄2 Cup (24 tbs)|
|Sliced carrot||1 1⁄2 Cup (24 tbs)|
|Chopped celery||1 Cup (16 tbs)|
|Milk||1⁄2 Cup (8 tbs)|
|Flour||1 Cup (16 tbs)|
Soak peas overnight in water to cover; drain.
Com- bine 2 1/2 quarts water, peas, hambone and onion.
Simmer, covered, for 3 lours.
Remove bone; cut off meat.
Return meat to soup; add cabbage, carrots and celery.
Season with salt and pepper.
Simmer, cov- ered, for 20 minutes or until vegetables are tender.Mix egg, milk and salt; add enough flour to form soft dough.
Drop by teaspoonfuls into soup.
Simmer, covered, for 7 to 10 minutes.
