Chilled Pea Soup
|Shelled english peas/10-ounce frozen english peas||2 Cup (32 tbs)|
|Shredded lettuce||2 Cup (32 tbs)|
|Canned chicken broth||10 3⁄4 Ounce|
|Water||1⁄3 Cup (5.33 tbs)|
|Tomato juice||1⁄4 Cup (4 tbs)|
|Chopped green onion||1⁄4 Cup (4 tbs)|
|Minced fresh parsley||1 Tablespoon|
|Dried thyme||1⁄4 Teaspoon|
|White pepper||1⁄4 Teaspoon|
|Whipping cream||1⁄2 Cup (8 tbs)|
Combine first 10 ingredients in a saucepan; bring to a boil.
Cover, reduce heat, and simmer 20 minutes.
Remove from heat, and cool slightly.
Pour pea mixture into container of electric blender; process until smooth.
Stir in whipping cream.
Cover and chill.
