1.Heat the oil in a frying pan and cook the onion for 3 minutes on a large heat.
2.Add the carrot, cook for 3 minutes and turn off the heat.
3.Boil water in a pot (3 / 4 full) on large heat and then add the potatoes and cabbage.
4.When the water boils again, add the red pepper and chicken broth.
5.Reduce the heat and cook for 10 minutes.
6.After 10 minutes add the peas and the cooked onion and carrot.
7.Season with little salt and pepper, tomatoes, parsley and cilantro and cook for 5 more minutes.
8.Serve hot with some bread crumbs or some garlic bread if you like.
