Black Bean Soup

Ingredients
  Bacon 4 Slices, dice
  Onion 1⁄2 Cup (8 tbs), dice
  Celery 1⁄4 Cup (4 tbs), dice
  Cilantro 1 Tablespoon, chop
  Green onion 2 , chop (Save some for garnish)
  Garlic cloves 2 , mince
  Roma tomatoes 2 , dice (1/2 for garnish)
  Refried beans 1 Can (10 oz)
  Black beans 1 Can (10 oz), drained
  Chicken stock 2 Cup (32 tbs)
  Cheddar cheese 1 Teaspoon (For Garnish)
  Sour cream 1 Teaspoon (For Garnish)
  Thyme 2 Pinch
  Black pepper 1⁄2 Teaspoon
  Salt 1 Teaspoon
  Cumin 1 Teaspoon, ground
Directions

MAKING
1. Heat a pan, add bacon and brown.
2. Add onions, celery, red peppers, green onions and garlic and stir for 2 minutes.
3. Add the tomatoes and stir and cook for 3-4 minutes.
4. Add th black beans.
5. Add the thyme, black pepper, salt and cumin and saute.
6. Add chicken stock and refried beans and bring to a boil.
7. Add the cilantro and stir and put the lid on and simmer for an hour and a half.

SERVING
8. Ladle the soup into a soup bowl, garnish with tomatoes, a dollop of sour cream, a dash of cheese and green onions and serve hot.
