Burnet Celery Soup
|Chopped burnet/2 teaspoons dried whole burnet||2 Tablespoon|
|Whipping cream||3 Tablespoon|
Combine first 5 ingredients in a large saucepan; simmer 30 minutes (do not boil).
Pour half of mixture into blender and process30 seconds; strain through a sieve.
Repeat with remaining mixture.
Return to saucepan.
Stir in salt, pepper, whipping cream, and butter.
Heat thoroughly (do not boil), stirring occasionally.
Chill before serving.
Garnish with sliced celery and burnet leaves, if desired.
