Easy Onion Soup with Bacon and Swiss Cheese Crostini
|Onions||2 Large, finely sliced|
|Bacon||6 Slices, finely chopped|
|Gruyere cheese||8 Slices|
|Low sodium beef stock||1 Quart|
|Cooking oil spray||1|
1.Cook bacon over medium high heat until browned and crispy. Keep aside.
2.Caramelize onions over high heat in a dry non-stick frying pan stirring constantly for about 15 minutes.
3.Lower heat to and stir in butter.
4.Spoon the onion mixture into the beef stock in a large soup pot. Simmer for 10 minutes.
5.Add Salt and pepper to taste if necessary.
6.Spray baguette slices with cooking oil and place on a baking sheet .
7.Toast for about 2 to 3 minutes.
8.Turn bread slices over and top with bacon and cheese.
9.Bake for some more time till the cheese melts.
10. Ladle the soup into warm soup bowls.
11. Float two cheese and bacon crostini in each soup bowl and serve hot.
