The taste and texture of cool watermelon is complimented by cucumber and tangy feta cheese, combining the worlds of salty and sweet.
1 Bunch (100 gm)
1. Chop the watermelon into small pieces. Watch the video to learn an easy technique to do this.
2. Dice cucumbers.
3.Blend the watermelon.
4.Strain through a nylon meshed sieve to remove seeds.
5.Add diced cucumber.
6.Chill well until ready to serve.
7. Pour chilled soup into cocktail glasses or glass bowls
8. Crumble feta cheese on top
9. Garnish with fresh mint leaves
