1) Take a saucepan and melt butter and whisk in flour.
2) Stir for few seconds and stir in milk. Keep stirring.
3) Add salt and pepper and let it boil.
4) Add onion, chicken broth and potato diced and stir.
5) Let it cook for 5 minutes.
6) Using a hand blender, make a smooth paste of the potato dices.
7) Fold in cheese and stir to mix.
8) Adjust the seasoning.
9) Serve the creamy potato soup with any bacon, vegetables as it is.
