Mint Pea Soup

Ingredients
  Leeks 1 1⁄2 Cup (24 tbs)
  Frozen peas 16 Ounce
  Fresh parsley 4⁄5 Cup (12.8 tbs)
  Fresh mint 1 Cup (16 tbs)
  Rice milk 1 1⁄2 Cup (24 tbs)
  Vegetable broth 3 Cup (48 tbs)
  Salt & pepper 1⁄2 Teaspoon
  Real crab meat 2 Teaspoon
  Chia twister 1 Teaspoon
  Coconut oil milk 2 Teaspoon
Directions

MAKING
1. Heat coconut oil in pot. Add leeks and sauté until soft.
2. Stir in peas, stock, mint, parsley. Bring to a boil. Reduce to a simmer and continue to cook for about 15 minutes.
3. Remove 4 tablespoon of peas for garnish.
4. Pour soup into food processor add rice milk and puree. Season with salt and pepper to taste.

SERVING
5. Ladle soup in to soup bowl. Garnish with peas, crab, and chia twister and serve.
