1) Put all the chicken in a pot – and fill with water
2) Clean the onion and put in with the chicken. Bring this all to a boil. If you want an extra treat, throw in some roasted garlic – or what the heck – any type – cloves preferred!
3) This usually takes about 30 minutes – then put the onion and chicken on a tray to cool.
4)Then add the carrots, celery and a bouillon cube, chicken or vegetable.
5) Simmer this until the veggies are still with a crunch – but not crunchy!
6)Clean the chicken and chop the onion and add that all back to the pot. Right before serving (about 10 minutes) add parsley.
7)Serve with brown rice, barley, spelt or rice noodles.
