Hearty Lentil Soup

Guilt free eating at its best, the flavors of bacon, maple, and apple, melded perfectly with the sweet heat of the cumin and curry making this an absolutely delicious weekend meal.
Ingredients
  Turkey bacon slices 5 , diced small
  Dijon mustard 1 Teaspoon
  Syrup of maple 1 Tablespoon
  Extra virgin olive oil 1 Tablespoon
  Onion 1 Medium, chopped
  Carrot 1 , diced
  Celery stalk 1 , diced
  Red potato 1 Medium, peeled and diced
  Apple 1 , diced
  Garlic 3 Clove (15 gm), chopped
  Black pepper 1⁄2 Teaspoon
  Cumin 1 Teaspoon
  Lentils 1 Cup (16 tbs)
  Low sodium chicken broth 6 Cup (96 tbs)
  Swiss chard 100 Gram, chopped
  White vinegar 1 Tablespoon
Directions

MAKING
1. Mix the diced turkey bacon together with the maple syrup and Dijon mustard.
2. Heat the olive oil over medium high heat in a large non stick Dutch oven or soup pot.
3. Add the turkey bacon and chopped onion.
4. Sauté until onion begins to get soft and turkey begins to crisp (approx. five minutes).
5. Add the cumin, curry powder, carrots, celery, and potato.
6. Continue to sauté another minute stirring constantly.
7. Add the apple and garlic, continue to stir.
8. Add the lentils and stir until everything is incorporated.
9. Add the chicken stock and bay leaf.
10. Bring to a boil and then turn to med low.
11. Cover and simmer stirring occasionally for 15 minutes.
12. Add the chopped Swiss chard and vinegar.
13. Continue covered at a simmering boil over med low heat 45 minutes or until the lentils are soft and cooked through.
14. Remove pot from heat and let sit covered for 30 minutes before serving.

SERVING
15. Serve hot.
