Mushroom And Parsley Soup

Ingredients
  Mushrooms 8 Ounce, finely chopped
  Plain flour 1 Ounce
  Butter 1 Ounce
  Parsley 2 Tablespoon, finely chopped
  Milk 1⁄2 Pint
  Water/Chicken stock 1⁄2 Pint
  Salt To Taste
  Pepper To Taste
  Lemon juice 1 Teaspoon
  Single cream 20 Milliliter
Directions

MAKING
1. Finely chop the mushrooms.
2. Saute gently in the butter for 2 to 3 minutes till softened.
3. Stir in the flour and cook for 30 seconds.
4. Add the salt, pepper, parsley, milk and water and simmer gently for 15 minutes.

SERVING
5. Serve in warmed bowls, adding a teaspoon of lemon juice and a swirl of cream.
