Savory Tomato Rice Soup With Herbed Yogurt

Ingredients
  Olive oil 2 Tablespoon
  Orange peel 1⁄2 Teaspoon
  Onion 1 Large, chopped
  Garlic 4 Clove (20 gm), chopped
  Dried basil 1 Tablespoon
  Marjoram 1 Teaspoon
  Cumin 1 Teaspoon
  Cayenne pepper 1 Pinch
  Tomatoes 4 , diced
  Tomato puree 1 Cup (16 tbs)
  Water/Vegetable broth 3 Cup (48 tbs)
  Cooked brown rice 2 Cup (32 tbs)
  Salt To Taste
  Pepper To Taste
  Low fat plain yogurt 1 Cup (16 tbs)
  Sliced scallions 1 Cup (16 tbs)
  Garlic powder 1⁄2 Teaspoon
Directions

MAKING
1.Take a large kettle,add olive oil and warm it
2.Add the orange peel,onion and garlic.saute till onions are soft
3 Sprinkle the herbs and cumin.Add the cayenne.
4.Cook till cumin is fragrant,about 5 minutes
5.Add tomatoes,tomatoe puree,water and cooked rice,and let soup come to a boil
6.Reduce the flame to low,cover and simmer for 10 minutes
7 Taste and adjust seasoning.
8 To make herbed yoghurt,whisk all the ingredients together and serve a dollop in each bowl

SERVING
9 Serve fresh
