Hot And Sour Tofu Soup

Ingredients
  Chinese dried mushroom 2 , soaked in 50 gram of cooked leftover meat (pork, chicken beef or lamb)
  Chicken stock 450 Milliliter
  Tofu 100 Gram
  Cider vinegar 30 Milliliter
  Soy sauce 30 Milliliter
  Eggs 2
  Chili oil 5 Milliliter
  Salt To Taste
Directions

MAKING
1) Into a colander, drain the mushrooms
2) Using a sharp knife, slice very thinly
3) Into a saucepan, add the stock and bring to a gentle boil
4) Drain the tofu and using a knife, cut the tofu into thin strips
5) Into the pan add the soy sauce and the vinegar
6) Into a bowl, gently crack the eggs
7) Using a fork, beat well
8) In a steady stream, pour the egg into the soup
9) Check for seasoning

SERVING
10) Serve the hot soup into bowls and serve immediately
