Vegetarian Potato Soup

Ingredients
  Oil 1⁄4 Cup (4 tbs)
  Onion 1 , chopped
  Carrots 3 , grated
  Stalk celery 1 , chopped
  Potatoes 8 , diced, wash well and leave skins on
  Stock/Water 1 Quart
  Vegetable salt 1 Teaspoon
  Dry milk powder 1 1⁄2 Cup (24 tbs) (Non Instant)
  Milk 1⁄2 Cup (8 tbs)
Directions

MAKING
1.In a pan, heat oil and cook onions, celery, carrots and potatoes in it.
2.Add stock and vegetable salt and let the mixture boil.
3.Once done allow it to simmer for 1 hour or pressure cook for 15 minutes.
4.Take 2 cups of soup liquid and stir in dry milk powder and 1/2 cup milk to it.
5.Mix well until dissolved.
6.Put the mixture in the soup and cook for 5 minutes.

SERVING
7.Serve potato soup with grated Cheddar Cheese.
