Vegetarian Potato Soup
|Oil||1⁄4 Cup (4 tbs)|
|Onion||1 , chopped|
|Carrots||3 , grated|
|Stalk celery||1 , chopped|
|Potatoes||8 , diced, wash well and leave skins on|
|Vegetable salt||1 Teaspoon|
|Dry milk powder||1 1⁄2 Cup (24 tbs) (Non Instant)|
|Milk||1⁄2 Cup (8 tbs)|
1.In a pan, heat oil and cook onions, celery, carrots and potatoes in it.
2.Add stock and vegetable salt and let the mixture boil.
3.Once done allow it to simmer for 1 hour or pressure cook for 15 minutes.
4.Take 2 cups of soup liquid and stir in dry milk powder and 1/2 cup milk to it.
5.Mix well until dissolved.
6.Put the mixture in the soup and cook for 5 minutes.
7.Serve potato soup with grated Cheddar Cheese.
