Split Pea Soup

Ingredients
  Green split peas 1 Pound
  Water 2 Quart
  Salt 2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Dried marjoram leaves 1⁄4 Teaspoon
  Onion 1 1⁄2 Cup (24 tbs), finely chopped
  Ham hocks 1 Pound
  Celery 1 Cup (16 tbs), finely chopped
  Carrots 1 Cup (16 tbs), thinly sliced
  Potatoes 1 Cup (16 tbs), peeled and cubed
Directions

GETTING READY
1) Wash the peas

2) Into a saucepan, add water, salt, pepper, marjoram, onion and ham hocks
3) Bring to a gentle boil and simmer for 1 1/2 hours with a lid on
4) Remove the ham and discard the fat and bones
5) Using a knife chop he meat into pieces and return to the soup mixture
6) Add potatoes and cook for an additional 15 minutes
7) Allow to rest
8) Place into containers to chill in the refrigerator
9) Thaw before serving
10) Add 2 cups of water to about each quart of the soup and reheat

SERVING
11) Serve the soup portioned into 2 bowls
