Highland Soup

Ingredients
  Potatoes 6 Large
  Leeks 6
  Butter 2 Ounce (50 Grams)
  Stock 3 Pint (1.5 Liter)
  Chives 2 Tablespoon, chopped
  Salt To Taste
  Black pepper To Taste
Directions

GETTING READY
1) Cut all the vegetables into pieces.

MAKING
2) In a pan fry the vegetables in the butter till golden.
3) Add the stock and salt, and simmer the vegetables for 1 1/2 hours.
4) Sieve or liquidise the tender vegetables.
5) Return the puree to the pan.
6) Add the chives and black pepper with salt.
7) Return the soup to boil for about 45 minutes.

SERVING
8) Serve the soup with a dollop of cream or croutons.
