Beef/Vegetable Soup

Ingredients
  Meaty soup bones 3 Pound (1 In Number)
  Water 3 Cup (48 tbs)
  Salt 1 Tablespoon
  Tomato juice 2 1⁄2 Cup (40 tbs)
  Carrots 1 Cup (16 tbs), diced
  Celery 1 Cup (16 tbs), diced
  Potatoes 1 Cup (16 tbs), diced
  Onion 1 , diced to make 1 cup
Directions

MAKING
1) Into a kettle place the soup bone, salt and water
2) Simmer for about 2 hours with a lid on
3) Add to it the tomato juice, potatoes, celery. Carrots and onion and cook till the vegetables are soft
4) Cut the meat into pieces, add into the soup and discard the bone
5) Pour into containers and then place in the freezer for the fat to congeal
6) Remove the fat and label the container appropriately
7) Thaw before serving
8) Add 1 cup water to a pint of soup and heat till bubbly hot

SERVING
9) Serve the soup portioned into 4 bowls
