Hearty Lentil Soup

Ingredients
  Dried lentils 1 Pound
  Smoked ham hocks 1 Pound
  Water 6 Cup (96 tbs)
  Celery stalks with leaves 4 , chopped
  Carrots 2 , cut into 1/2-inch cubes
  Onion 1 Large, chopped
  Salt 1 Teaspoon
  Pepper 1⁄4 Teaspoon
Directions

MAKING
1) In a slow cooker, place together lentils, ham hocks, celery, carrots, onions and seasoning.
2) Put the lid on and simmer for 6 to 8 hours.
3) Using a ladle press some of the lentils to thicken the soup.

FINALIZING
4) Take the ham out of the lentil mixture and cut into cubes.
5) Put the ham back into the lentil soup.
6) Pour in more water if required.

SERVING
7) Serve the soup hot garnished with chopped parsley if desired.
