Cream Of Lettuce And Spinach Soup

Ingredients
  Chicken stock 2 Cup (32 tbs)
  Leaf lettuce 2 Cup (32 tbs) (Packed)
  Spinach leaves 1 Cup (16 tbs)
  Long grain rice 2⁄3 Cup (10.67 tbs), cooked
  Mace 1 Pinch
  Light cream/Milk 1 1⁄2 Cup (24 tbs)
  Hot pepper sauce 1 Dash
  Salt To Taste
  Pepper To Taste
  Finely chopped pimento 1 Tablespoon
Directions

MAKING
1) Into a saucepan, combine the stock, lettuce spinach, rice and mace
2) Cover and bring to a gentle boil
3) Simmer over low heat for 15 minutes
4) Into a food processor, blend in batches for 2-3 minutes until smooth
5) Scrape down the sides of the bowl timely
6) Return the mixture to the saucepan and stir in the cream
7) Bring to a gentle simmer
8) Season with salt and hot pepper sauce

SERVING
9) Serve warm or chilled and garnish with pimento into soup bowls
