Barley - 1/3 cup
Onion - 1/4 cup, chopped
Green pepper - 1/2 cup, cut in 1-inch strips
Red pepper - 1/2 cup, cut in 1-inch strips
Beef broth - 2 cans (14 1/2 oz. each)
Chopped chives or parsley for garnish
1) Take a 2-quart saucepan and pour broth in it. Add barley and onion to it. Bring the mixture to a boil.
2) Reduce heat to low and cover. Simmer for about 45 minutes.
3) Add peppers and cook for another 15 minutes or until barley is tender.
4) Garnish with chopped parsley or chives and enjoy!
