Romertopf Mushroom Soup

Ingredients
  Mushrooms 1 Pound
  Butter 3 Pound
  Chicken stock 1 1⁄2 Pint
  Onion 1
  Cream 1⁄2 Cup (8 tbs)
  Lemon juice 1⁄2
  Grated nutmeg To Taste
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1) Preheat the oven to 400F.
2) Rinse and chop the tomatoes.

MAKING
3) In a saute pan, heat oil. Add in the mushrooms and saute 2 to 3 minutes.
4) Transfer the mushrooms into a soaked romertorpf.
5) Pour in the chicken stock.
6) Add in the lemon juice, salt and pepper. Drop in butter, chopped into small pieces.
7) Stir once well. Cover the vessel. Cook for at least 60 minutes.

SERVING
8) Stir in cream into the Mushroom Soup.
9) Sprinkle with grated nutmeg or chopped parsley on top.
