Chilled Cantaloupe Soup
|Ripe cantaloupe||3 Pound (1 no.)|
|Dry sherry||1⁄2 Cup (8 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Orange juice||1⁄4 Cup (4 tbs)|
1 Cut the melon in half.
2 Scoop the seeds out and discard.
3 Scoop out the cantaloupe meat.
4 Fit the blender or food processor with the steel blade,
5 Add in the cantaloupe and rest of ingredients.
6 Blend several times until smooth.
7 Transfer to a bowl and cover.
8 Refrigerate until very cold, You can chill the mixture over ice cubes also.
9 Serve in hilled serving bowls.
