Potherb Soup Chez Moi
|Potatoes||4 Large, peeled and washed, diced small|
|Boiling water||8 Cup (128 tbs)|
|Potherbs||2 Pound, cut into strips|
|Olive oil||4 Tablespoon|
|Hot pepper flakes||1⁄2 Teaspoon (To Taste, Optional)|
|Freshly ground pepper||To Taste|
Cook the potatoes in the boiling water until barely tender.
Add the potherbs.
Bring to the boiling point and stir in the olive oil, hot pepper flakes and salt and pepper.
Lower heat to medium and cook for 3 minutes, stirring frequently.
The vegetables should be still crisp.
