Potherb Soup Chez Moi

Ingredients
  Potatoes 4 Large, peeled and washed, diced small
  Boiling water 8 Cup (128 tbs)
  Potherbs 2 Pound, cut into strips
  Olive oil 4 Tablespoon
  Hot pepper flakes 1⁄2 Teaspoon (To Taste, Optional)
  Salt To Taste
  Freshly ground pepper To Taste
Directions

Cook the potatoes in the boiling water until barely tender.
Add the potherbs.
Bring to the boiling point and stir in the olive oil, hot pepper flakes and salt and pepper.
Lower heat to medium and cook for 3 minutes, stirring frequently.
The vegetables should be still crisp.
