Arabic Soup

This is a middle eastern inspired lamb and oat soup flavored with whole spices. Arabic soup is very nutritious and wholesome and can be eaten as a stew with bread.
Ingredients
  Lamb 2 Pound
  Onions 1 Cup (16 tbs), sliced
  Butter/Oil 1 Tablespoon
  Cinnamon sticks 2
  Cloves 3
  Peppercorns 2
  Garlic 1 Clove (5 gm), minced
  Ginger 1 , chopped
  Oats/Use broken wheat soaked in boiling water for 4 to 5 hours 5 Tablespoon
  Water 7 Cup (112 tbs)
  Mint leaves 1 , chopped
  Salt To Taste
Directions

MAKING
1)Heat fat in pressure cooker or pan.
2)Add the meat and saute until lightly browned.
3)Add the onions, garlic, ginger and spices and saute until limp. If using broken wheat, add at this point.
4)Pour in the water and bring to boil, stirring.
5)Cover and pressure cook or simmer meat until tender.
6)Stir in oats, milk and mint.
7)Season to taste and simmer until piping hot.

SERVING
8) Ladle into large soup plates.
9) Make small pieces of bread and add to soup to soften.
10)Enjoy piping hot.

Story
We all think of a hot bowl of soup to warm us during cold winter days or when we are ill. For me, it is this Arabic soup that my mother prepares when I am down with a flu. Try this recipe and you will agree with the motherly advice "soup is good for you" This hearty lamb and oat Arabic soup is truly a "soup for the soul."

I have made a similar soup and I love it! This is a better recipe and I will follow this next time I want to make Arabic soup.
