Pea And Ham Soup

Ingredients
  Butter 1⁄2 Ounce (15 Grams)
  Olive oil 1 Tablespoon
  Garlic 2 Clove (10 gm), crushed
  Onion 1 , finely chopped
  Button mushrooms 4 Ounce, sliced (125 Grams)
  Chicken stock 1 3⁄4 Pint (4 Cups / 1 Liter)
  Paprika 1⁄2 Teaspoon
  Celery stalks 3 , chopped
  Lettuce leaves 10 Large, shredded
  Peas 8 Ounce (Fresh Or Frozen, 250 Grams)
  Ham 4 Ounce, diced (125 Grams)
  Red pepper 1⁄4 , finely chopped (Capsicum)
  Fresh parsley 2 Tablespoon, chopped
  Black pepper To Taste
Directions

MAKING
1. In a large saucepan heat butter and oil and cook garlic, onion and mushrooms for 3 minutes.
2. Stirring in stock and paprika bring to the boil, then reduce heat and simmer for 10 minutes.
3. Add celery, lettuce and peas and cook for 5 minutes longer until peas are tender.
4. Stir in ham, red pepper (capsicum), parsley and black pepper to taste and cook for 3-4 minutes.

SERVING
5. Serve hot with desired garnish.
