Ginger Broccoli Soup
|Onion||1 Medium, halved and finely sliced|
|Chicken stock||3 3⁄4 Cup (60 tbs)|
|Water||2 1⁄2 Cup (40 tbs)|
|Fresh ginger root||1 Inch, grated|
|Cayenne pepper||1⁄2 Teaspoon|
|Lemon juice||2 Tablespoon (From 1 Lemon)|
|Fresh broccoli||3⁄4 Pound, cut into bite-size florets|
Melt the butter in a saucepan over medium-low heat, add the onion, and cook until it begins to brown, stirring occasionally.
Meanwhile, heat the stock, water, and grated ginger in a saucepan for 5-6 minutes.
Do not boil.
Add the onion, cayenne pepper, lemon juice, and then the broccoli to the liquid.
Cook over medium heat, stirring occasionally, for 7 more minutes.
Do not let the soup boil.
Serve right away.
