Black Bean Soup

Ingredients
  Black beans 4 Ounce (Uncooked)
  Water 1 Quart
  Margarine 1 1⁄3 Tablespoon (1 Tablespoon Plus 1 Teaspoon)
  Onion 1⁄4 Cup (4 tbs), diced
  Fresh garlic 1 Teaspoon, chopped
  Garlic 1 Teaspoon, chopped
  Chicken broth 2 1⁄4 Cup (36 tbs)
  Carrot 1⁄2 Cup (8 tbs), chopped
  Celery 1⁄2 Cup (8 tbs), chopped
  White vinegar 1 1⁄2 Teaspoon
  Bay leaf 1
  Dry red wine 2 2⁄3 Tablespoon (2 Tablespoons Plus 2 Teaspoons)
  Salt 1⁄4 Teaspoon
  Hard-cooked eggs 2 , chopped
  Pepper 1⁄8 Teaspoon
  Lemon juice 1 Teaspoon
  Hard-cooked eggs 2
Directions

GETTING READY
1. Sort and clean the beans by rinsing them well in water
2. In a large 2-quart saucepan, pour in water and add the beans to the pan
3. Boil this for 2 minutes and then remove from heat
4. Let the beans cook in the water for one hour
5. Return the saucepan to the heat and bring the mixture to the boil again
6. Cook this mixture on simmer for 30 minutes
7. Drain the beans and set aside one cup of the cooking liquid for later
8. Reserved the beans

MAKING
9. In the same saucepan, heat the margarine till bubbly
10. Add onions and garlic to the pan and sauté on low till they are softened
11. Add the broth, carrot, celery, beans, reserved cooking liquid, vinegar, and bay leaf to the saucepan and bring to the boil again
12. Reduce heat, cover the pan and simmer till the beans are soft for about1-1/2 hours
13. Cool the mixture and then remove the bay leaf
14. In the blender bowl, tip in 1-1/2 cup of the soup and blend till smooth. Transfer the mixture to a 2-quart bowl and repeat the procedure with the rest of the soup till the mixture is smooth. Ensure that all the soup is processed to a smooth paste.
15. Pour out the soup into a saucepan.
16. Add wine, salt, pepper and bring to the boil again
17. Reduce heat and simmer for five minutes

FINALIZING
18. Add the lemon juice just before serving
19. Pour the soup into four bowls
20. Garnish with ¼ of the chopped eggs

SERVING
21. Serve hot immediately
