Toddie's Heavenly Cheese Soup

This cheese soup will definitely take you by surprise. The cheese soup is not heavy but light and filling. There are number of cheese soup recipes, some include potatoes, onions and this one has green pepper and tangy tomatoes.
Ingredients
  Onion 1 Small
  Celery stalks 2
  Green pepper 1⁄2 Small
  Cheddar cheese 1⁄2 Pound
  Milk 3 Cup (48 tbs)
  Consomme 1 Can (10 oz)
  Margarine/Butter 3 Tablespoon
  All purpose flour 3 Tablespoon
  Tomato paste 1 Tablespoon
  Salt 1⁄2 Teaspoon
  Cayenne pepper 1 Dash
  Water cress 1 Tablespoon
Directions

GETTING READY
1)Mince vegetables and water cress.
2)Grate cheese.
3)In a bowl, mix milk and consomme’.

MAKING
4)In blazer pan, heat margarine and saute vegetables until tender.
5)Add flour until well blended.
6)Add milk-consomme mixture, cheese and stir until melted.
7)Add tomato paste and seasonings.
8)Place the pan on hot water and cook until smooth.

SERVING
9)Garnish cheese soup with water cress and serve.
