Sour Catfish Soup

Ingredients
  Tamarind 1 Ounce
  Hot water 4 Cup (64 tbs)
  Oil 1 Tablespoon
  Ginger 2 Tablespoon, minced
  Green onions 2 , thinly sliced
  Lemongrass stalk 1 , thinly sliced
  Hot pepper flakes 1 Pinch
  Fish sauce 2 Tablespoon
  Lemon juice To Taste
  Catfish fillets 1⁄2 Pound
  Cucumber slices 4 (To Garnish)
Directions

GETTING READY
1. Soak the tamarind pulp in hot water till it softens

MAKING
2. In a medium saucepan, heat oil over medium flame; add ginger, green onions, lemongrass and hot pepper flakes and cook till fragrant
3. Into the same saucepan, strain tamarind water through a fine mesh strainer, strain the chunks and pulp with a wooden spoon and discard the seeds and fibers
4. Add fish sauce to the pan, allow to simmer for five minutes, adjust seasonings; add catfiosh slices and cook till opaque white

SERVING
5. Garnish with cucumber slices and serve at once
