Oriental Chicken Noodle Soup

Ingredients
  Dry udon noodles 4 Ounce
  Chicken broth 2 Cup (32 tbs)
  Brown sugar 1 Teaspoon
  Fresh minced ginger/0.5 teaspoon ground ginger 1 Teaspoon
  Soy sauce 2 Tablespoon
  Bean sprouts 3⁄4 Cup (12 tbs)
  Bok choy leaves 2 (From 2 Heads Of Bok Choy)
  Bok choy stalks 1 (From 2 Heads Of Bok Choy)
  Skinless boneless chicken thigh 1 , cut into 1/2 inch pieces
Directions

Cook the noodles in a pot of boiling water, according to packet instructions. Meanwhile, fill a second pot with with stock, brown sugar, ginger and soy sauce. Drain the noodles in a colander when done.

When the flavored stock comes to a boil, add the chicken, bean sprouts, and bok choy stalks, then after a minute, add the bok choy leaves. Let cook for another minute.

Distribute the noodles evenly into each bowl, and add the stock/chicken/vegetables on top.
