Cook the noodles in a pot of boiling water, according to packet instructions. Meanwhile, fill a second pot with with stock, brown sugar, ginger and soy sauce. Drain the noodles in a colander when done.
When the flavored stock comes to a boil, add the chicken, bean sprouts, and bok choy stalks, then after a minute, add the bok choy leaves. Let cook for another minute.
